No time to make breakfast? Make this muesli the night before and put in the fridge. When you get up in the morning you can heat it or eat it cold. The choice of toppings are endless but a banana, some nuts and a bit of almond milk or yogurt should get you through until lunch time. This recipe makes 2 servings.
- 1 cup steel cut oats
- 1 cup unsweetened almond milk or other milk of choice
- 2 tbls chia seeds
- 1/4 teas ground cardamom
- 1/4 teas ground ginger
- 1/4 teas ground cinnamon
- 1/8 teas ground nutmeg
- 1/8 teas ground pepper
- 1 teas vanilla extract
- 1 tbls pure maple syrup or honey
- Place all ingredients in a glass bowl, preferably one with a lid. Stir together the contents and cover with a lid.
- Place in fridge overnight. In the morning you can heat in the microwave or eat cold.
