Fish Dinner

This is the secret recipe to get your kids to eat fish, provided they like scalloped potatoes.  I usually toss in a variety of frozen vegetables with the fish which adds to the visual appeal and helps to further disguise the fish.

Ingredients

  • 1/2 cup sliced toasted almonds(optional)
  • 1 cup grated cheese
  • 1 med onion, sliced
  • 4 medium red potatoes, sliced, rinsed and drained
  • 1 to 1 1/2 lbs haddock
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 teas salt
  • 1/4 teas pepper
  • 1 1/2 cups milk
  • frozen vegetables

Directions

  1. Cut fish into 1″ pieces and place in bottom of a greased 7″x 11″ pan(lasagna pan).  Add frozen vegetables.
  2. Heat the butter in a saucepan and add onions cooking until transparent. Blend in flour, salt and pepper and stir a minute to cook flour. Add milk stirring constantly. Bring to a boil, turn down heat and stir until mixture thickens. Pour some of the sauce over the fish.
  3. Layer the potatoes, cheese and sauce.
  4. Sprinkle with toasted almonds(if using)
  5. Bake at 375F for about 1 hour.  Let cool about 10 minutes then serve.

Suggestions:
I slice the potatoes and the onions in the food processor. I rinse the potatoes in a colander under cold water to remove excess starch and drain them on tea towels.
