Gingerbread

Ingredients

  • 1/4 cup oil or shortening
  • 1/2 cup applesauce (made without cinnamon)
  • 1/2 cup brown sugar
  • 3/4 cup molasses
  • 2 eggs, beaten
  • 2 1/4 cups flour
  • 2 1/2 teas baking powder
  • 3/4 teas baking soda
  • 3 teas ginger powder
  • 1/2 teas cinnamon
  • 1/2 teas nutmeg
  • 1 tbls grated gingeroot
  • 1 cup cold ginger drink or cold tea

Directions

  1. Mix eggs, molasses, brown sugar, applesauce and oil or shortening with mixer.
  2. Whisk together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg and grated gingeroot together in another bowl.
  3. Add to wet ingredients in mixer bowl alternately with the ginger drink or cold tea.
  4. Bake in a greased 9 X 13 pan at 350F for about 30 minutes

Serving Suggestions:
Whipped cream or lemon sauce

Optional:
Ginger drink is a packaged product found in an Asian grocery store. It is ginger and sugar and is mixed with hot water and cooled to add to this recipe. The original recipe calls for cold tea but the ginger drink gives and added ginger flavour.
