{"id":1331,"date":"2019-08-15T13:50:54","date_gmt":"2019-08-15T13:50:54","guid":{"rendered":"http:\/\/ravenview.com\/recipes\/?p=1331"},"modified":"2020-05-23T19:15:03","modified_gmt":"2020-05-23T19:15:03","slug":"biscochitos","status":"publish","type":"post","link":"https:\/\/ravenview.com\/recipes\/biscochitos\/","title":{"rendered":"Biscochitos"},"content":{"rendered":"<p>Biscochitos are the Official State Cookie of New Mexico.\u00a0 After visiting New Mexico a few times we thought we needed a taste of those delicious little cookies at home here in Nova Scotia.\u00a0\u00a0\u00a0 They have a licorice flavour thanks to the anise seed and everyone loves them at first bite.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">1 1\/2 cups lard, chilled<\/li>\n<li>1 cup sugar<\/li>\n<li>2 eggs<\/li>\n<li>4 cups flour<\/li>\n<li>2 teas anise seed, ground<\/li>\n<li>2 teas baking powder<\/li>\n<li>1\/2 teas salt<\/li>\n<li>2 tbls vodka<\/li>\n<li>2 teas anise extract<\/li>\n<li>1 teas brandy extract<\/li>\n<li>3 tbls sugar<\/li>\n<li>1 teas cinnamon<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Stir flour, ground anise, baking powder and salt in a small bowl.<\/li>\n<li>Beat lard and sugar in the bowl of a stand mixer until fluffy.\u00a0 Add eggs and beat until very fluffy.<\/li>\n<li>Add the vodka, anise and brandy extract to the creamed mixture.<\/li>\n<li>Add the flour mixture to the creamed mixture.\u00a0 Mix thoroughly to make a stiff dough.<\/li>\n<li>Divide in half and place each half on a large piece of plastic wrap.\u00a0 Flatten to about 1&#8243; thick and refrigerate until chilled (several hours or overnight)<\/li>\n<li>Combine 3 tbls sugar and 1 teas cinnamon on a plate or shallow bowl.<\/li>\n<li>Roll out each piece of dough in the plastic wrap to 1\/4&#8243; thickness.\u00a0 Using a flour dusted cookie cutter, cut into 3&#8243; rounds and dip in cinnamon sugar (one side only).<\/li>\n<li>Place on ungreased baking sheet and bake at 350 F for 10-12 minutes.<\/li>\n<\/ol>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Notes<\/h3><\/p>\n<ol>\n<li>\u00a0Always use room temperature eggs.<\/li>\n<li>\u00a0I use two 1&#8242; X\u00a0 1\/4&#8243; wood strips under the rolling pin to get the 1\/4&#8243; thickness for the cookie dough<\/li>\n<\/ol>\n<p><\/div>\n\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Biscochitos are the Official State Cookie of New Mexico.\u00a0 After visiting New Mexico a few times we thought we needed a taste of those delicious little cookies at home here in Nova Scotia.\u00a0\u00a0\u00a0 They have [&hellip;]<\/p>\n","protected":false},"author":17,"featured_media":1348,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[98,87],"tags":[361],"_links":{"self":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts\/1331"}],"collection":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/users\/17"}],"replies":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/comments?post=1331"}],"version-history":[{"count":1,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts\/1331\/revisions"}],"predecessor-version":[{"id":1332,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts\/1331\/revisions\/1332"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/media\/1348"}],"wp:attachment":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/media?parent=1331"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/categories?post=1331"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/tags?post=1331"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
