Don’t you just love a one pan meal?\u00a0 This is a vegetarian version of Skillet Tamale Pie<\/a>.\u00a0 This comes together fast and is so easy to clean up, just one frying pan.\u00a0 We love crimini mushrooms but if they are unavailable try baby bellas or brown mushrooms.<\/p>\n

Ingredients<\/h3>\n
    \n
  • 2 tbls vegetable oil<\/li>\n
  • 1 medium onion, diced<\/li>\n
  • 1 1\/2 tbls chili powder<\/li>\n
  • 2 cloves garlic, crushed<\/li>\n
  • 3 cups crimini mushrooms, minced<\/li>\n
  • 1 19oz can black beans, drained and rinsed<\/li>\n
  • 2 large fresh tomatoes, seeded and diced or 14oz can diced tomatoes<\/li>\n
  • 1 cup cheddar cheese, grated<\/li>\n
  • 1 teas coriander or handful of chopped cilantro leaves<\/li>\n
  • 1\/2 teas cumin<\/li>\n
  • 2\/3 cup corn niblets<\/li>\n

    Cornmeal Topping<\/h3><\/p>\n
      \n
    • 3\/4 cup unbleached white flour<\/li>\n
    • 3\/4 cup cornmeal<\/li>\n
    • 2 tbls sugar<\/li>\n
    • 3\/4 teas baking powder<\/li>\n
    • 3\/4 teas baking soda<\/li>\n
    • 3\/4 teas salt<\/li>\n
    • 3\/4 cup milk or yogurt<\/li>\n
    • \u00a02 tbls melted butter and 1 tbls olive oil<\/li>\n
    • 1 large egg<\/li>\n<\/ul>\n

      Directions<\/h3><\/p>\n

      1. Choose a large skillet which can go in the oven.\u00a0 Put it on a burner at medium heat and add oil, onion and chili powder.\u00a0 Saute until the onions are translucent.\u00a0 Add the two cloves of crushed garlic.\u00a0 Stir once around the pan and add the mushrooms cooking until most of the moisture has cooked out of the mushrooms.\u00a0 Add the black beans and the chopped tomatoes and allow the tomatoes to wilt a bit.\u00a0 Add the cheese, coriander (or cilantro), cumin and corn niblets.\u00a0 Turn the heat to low and let it simmer away while you make the cornbread topping.<\/li>\n
      2. Preheat oven to 450F<\/li>\n
      3. In a medium bowl combine the flour, cornmeal, sugar, baking soda, baking powder and salt.\u00a0 In another small bowl combine the milk, butter and oil and egg.\u00a0 Whisk the wet ingredients into the dry ingredients.\u00a0 Using a soup spoon drop the batter onto the mixture in the skillet.\u00a0 Don’t worry if the cornbread does not completely cover the surface of the skillet.\u00a0 It will rise and fill in the gaps as it bakes.<\/li>\n
      4. Put in the oven and bake 10-12 minutes.\u00a0 Wrap handle of frying pan with a tea towel or pot holder so you won’t be tempted to grab it when serving this dish.<\/li>\n<\/ol>\n
