{"id":281,"date":"2014-07-17T12:52:29","date_gmt":"2014-07-17T12:52:29","guid":{"rendered":"http:\/\/ravenview.com\/recipes\/?p=281"},"modified":"2015-02-17T23:37:13","modified_gmt":"2015-02-17T23:37:13","slug":"veggie-lasagna","status":"publish","type":"post","link":"https:\/\/ravenview.com\/recipes\/veggie-lasagna\/","title":{"rendered":"Veggie Lasagna"},"content":{"rendered":"<p>I love this lasagna.\u00a0 You can change up the vegetables with any other fresh veggies you happen to have on hand.\u00a0 I use a homemade tomato sauce but if you are pressed for time a store bought tomato sauce would suffice.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">12 lasagna noodles<\/li>\n<li class=\"ingredient\">2 tbls olive oil<\/li>\n<li class=\"ingredient\">1 cup carrots, julienned<\/li>\n<li class=\"ingredient\">1 1\/2 cups zucchini, finely chopped<\/li>\n<li class=\"ingredient\">1 small green pepper, diced<\/li>\n<li class=\"ingredient\">3 cloves garlic, minced<\/li>\n<li class=\"ingredient\">3 cups fresh mushrooms, sliced<\/li>\n<li class=\"ingredient\">1 300g pkg baby spinach<\/li>\n<li class=\"ingredient\">2 tbls fresh basil, chopped<\/li>\n<li class=\"ingredient\">1 egg, lightly beaten<\/li>\n<li class=\"ingredient\">1 300g tub of ricotta cheese<\/li>\n<li class=\"ingredient\">1\/3 cup parmesan cheese, grated<\/li>\n<li class=\"ingredient\">1\/4 teas salt &amp; pepper<\/li>\n<li class=\"ingredient\">2 1\/2 cups tomato pasta sauce<\/li>\n<li class=\"ingredient\">1 cup goat mozzarella cheese, grated<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Cook lasagna noodles according to package directions, drain and set aside<\/li>\n<li>In a large skillet heat 1 tbls of the olive oil.\u00a0 Add carrots, peppers, zucchini and half of the garlic.\u00a0 Stir fry until vegetables are tender crisp.\u00a0 Transfer mixture to a bowl.<\/li>\n<li>Add remaining oil to the skillet along with the mushrooms and the remaining garlic.\u00a0 Cook until tender.\u00a0 Gradually add spinach until it is wilted.\u00a0 Transfer mixture to a second bowl.\u00a0 Add the basil.<\/li>\n<li>In another bowl stir together egg, ricotta, parmesan and salt &amp; pepper.<\/li>\n<li>In a 9 X 13 pan spread 1\/2 cup of pasta sauce.\u00a0 Arrange three to four noodles over the sauce.\u00a0 Top with half of the spinach mushroom mixture.\u00a0 Spoon half of the ricotta over that and top with another layer of noodles.\u00a0 Spread 1\/2 of the remaining pasta sauce.\u00a0 Top with the vegetable mixture.\u00a0 Sprinkle with half the mozzarella.\u00a0 Add another layer of noodles.\u00a0 Top with the remaining spinach mushroom mixture and the remaining ricotta cheese mixture.\u00a0 Add another layer of noodles and the remaining sauce.<\/li>\n<li>Bake 45 minutes at 350 F.\u00a0 Sprinkle with remaining mozzarella and\u00a0 bake about 15 minutes more.\u00a0 Remove from oven and let stand covered for about 15 minutes.<\/li>\n<\/ol>\n<p><\/div>\n\n","protected":false},"excerpt":{"rendered":"<p>I love this lasagna.\u00a0 You can change up the vegetables with any other fresh veggies you happen to have on hand.\u00a0 I use a homemade tomato sauce but if you are pressed for time a [&hellip;]<\/p>\n","protected":false},"author":17,"featured_media":652,"comment_status":"closed","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[67,86,66,82,93],"tags":[117,111,53,115],"_links":{"self":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts\/281"}],"collection":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/users\/17"}],"replies":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/comments?post=281"}],"version-history":[{"count":0,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts\/281\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/media\/652"}],"wp:attachment":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/media?parent=281"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/categories?post=281"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/tags?post=281"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
