{"id":288,"date":"2014-08-01T19:56:40","date_gmt":"2014-08-01T19:56:40","guid":{"rendered":"http:\/\/ravenview.com\/recipes\/?p=288"},"modified":"2014-08-20T03:08:14","modified_gmt":"2014-08-20T03:08:14","slug":"pineapple-salad","status":"publish","type":"post","link":"https:\/\/ravenview.com\/recipes\/pineapple-salad\/","title":{"rendered":"Pineapple Salad"},"content":{"rendered":"<p>This is so easy and so tasty and a nice change from all that lettuce salad.\u00a0 It is great to bring to a potluck.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Salad<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">1 ripe pineapple, peeled and cut into mouth size chunks<\/li>\n<li class=\"ingredient\">1\/4 cup vietnamese coriander or cilantro, chopped<\/li>\n<li class=\"ingredient\">1\/4 cup unsalted nuts, toasted and chopped<\/li>\n<li class=\"ingredient\">zest of 1\/2 lime<\/li>\n<li class=\"ingredient\">1\/2 fresh jalapeno, seeded and diced<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-ingredients\"><h3>Dressing<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">juice of 1\/2 lime<\/li>\n<li class=\"ingredient\">1 teas brown sugar<\/li>\n<li class=\"ingredient\">2 teas tamari or Bragg&#8217;s or soya sauce<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Combine salad ingredients in serving bowl.<\/li>\n<li>Combine dressing ingredients in small bowl and stir to dissolve the sugar.\u00a0 Pour over salad and stir to combine.\u00a0 Let rest in the fridge for up to one day.<\/li>\n<\/ol>\n<p><\/div>\n\n<p>I had also added some diced red pepper just for looks.<\/p>\n<p>I grow the vietnamese coriander in my garden every summer and bring the plant in the house for the winter. \u00a0 I love the taste, it is a milder coriander with a lime undertone.\u00a0 If you are lucky enough to find it at a garden centre it is an easy herb to grow in a pot and pays off big in taste.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is so easy and so tasty and a nice change from all that lettuce salad.\u00a0 It is great to bring to a potluck.
