{"id":518,"date":"2015-02-08T19:27:59","date_gmt":"2015-02-08T19:27:59","guid":{"rendered":"http:\/\/ravenview.com\/recipes\/?p=518"},"modified":"2020-10-02T10:23:36","modified_gmt":"2020-10-02T10:23:36","slug":"greek-pasta-with-chicken","status":"publish","type":"post","link":"https:\/\/ravenview.com\/recipes\/greek-pasta-with-chicken\/","title":{"rendered":"Greek Pasta With Chicken"},"content":{"rendered":"<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">2 1\/2 cups uncooked penne (gluten free) pasta<\/li>\n<li class=\"ingredient\">1\/4 cup butter\/margarine<\/li>\n<li class=\"ingredient\">1 large onion, chopped<\/li>\n<li class=\"ingredient\">1 tbls tapioca starch<\/li>\n<li class=\"ingredient\">1 tbls potato starch<\/li>\n<li class=\"ingredient\">2 tbls rice flour<\/li>\n<li class=\"ingredient\">1\/2 cup sun-dried tomatoes<\/li>\n<li class=\"ingredient\">10 oz chicken broth (see cooking instructions)<\/li>\n<li class=\"ingredient\">3 cups cooked chicken<\/li>\n<li class=\"ingredient\">1 7 1\/2 oz jar of marinated artichoke hearts drained<\/li>\n<li class=\"ingredient\">1 cup feta cheese, crumbled<\/li>\n<li class=\"ingredient\">1\/3 cup black olives, sliced<\/li>\n<li class=\"ingredient\">2 tbls parsley, chopped<\/li>\n<li class=\"ingredient\">1\/2 teas oregano<\/li>\n<li class=\"ingredient\">1\/2 teas thyme<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Cook pasta according to package directions.<\/li>\n<li>Chop sun dried tomatoes and soak in 3\/4 cup boiling water. Reserve this liquid, adding enough chicken broth to equal 15 oz.<\/li>\n<li>In a large oven proof skillet, melt butter.<\/li>\n<li>Saute onion until tender and stir in flour mixture, cooking it lightly.<\/li>\n<li>Add the broth\/soaking liquid gradually and stir until thickened.<\/li>\n<li>Add the chicken, artichoke hearts, cheese, tomatoes and olives.<\/li>\n<li>Drain pasta and stir into pan.<\/li>\n<li>Broil for 5-7 minutes until bubbly and golden.<\/li>\n<li>Sprinkle with parsley, oregano and thyme<\/li>\n<\/ol>\n<p><\/div>\n\n<p>Optional:<br \/>\nI used a gluten free pasta made from corn, rice and buckwheat, brand name felicia, 3 cereal pasta bought at Costco but any pasta will do.<\/p>\n<p>I used tapioca starch, potato starch and rice flour but you can use 1\/4 cup white flour<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Optional: I used a gluten free pasta made from corn, rice and buckwheat, brand name felicia, 3 cereal pasta bought at Costco but any pasta will do.
