{"id":815,"date":"2015-03-13T12:18:39","date_gmt":"2015-03-13T12:18:39","guid":{"rendered":"http:\/\/ravenview.com\/recipes\/?p=815"},"modified":"2015-03-25T22:47:16","modified_gmt":"2015-03-25T22:47:16","slug":"moroccan-chicken-bake","status":"publish","type":"post","link":"https:\/\/ravenview.com\/recipes\/moroccan-chicken-bake\/","title":{"rendered":"Moroccan Chick&#8221;en&#8221; Bake"},"content":{"rendered":"<p>I found this recipe in an old &#8220;chicken&#8221; cookbook.\u00a0 Since we have cut down on the amount of meat we eat I decided to incorporate chick peas into the recipe.\u00a0 The chick peas go nicely with the sweet taste of the raisins and the balsamic vinegar.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">1 28oz (796ml) can WELL<br \/>\nDRAINED diced tomatoes (save liquid to cook rice in)<\/li>\n<li class=\"ingredient\">1 boneless, skinless chicken breast, cut into small pieces<\/li>\n<li class=\"ingredient\">1\/2 19oz(540ml) chick peas<\/li>\n<li class=\"ingredient\">1 small onion, sliced thin<\/li>\n<li class=\"ingredient\">2 cloves garlic, sliced thin<\/li>\n<li class=\"ingredient\">2 tbls olive oil<\/li>\n<li class=\"ingredient\">1\/3 cup raisins<\/li>\n<li class=\"ingredient\">1\/2 teas ground cumin<\/li>\n<li class=\"ingredient\">1\/2 teas ground cinnamon<\/li>\n<li class=\"ingredient\">1\/2 teas curry powder<\/li>\n<li class=\"ingredient\">1\/2 teas ground coriander<\/li>\n<li class=\"ingredient\">1\/2 teas salt &amp; pepper<\/li>\n<li class=\"ingredient\">1\/2 pkg (156g) baby spinach<\/li>\n<li class=\"ingredient\">1 teas balsamic vinegar<\/li>\n<li class=\"ingredient\">4 servings brown rice (cooked)<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Heat roast pan in 425F(220C)oven.<\/li>\n<li>In a bowl toss well drained tomatoes with the chicken, olive oil, onion, garlic, raisins and spices including salt &amp; pepper.<\/li>\n<li>When oven reaches temperature and pan is hot add the chicken mixture.<\/li>\n<li>Spread mixture out and return to oven for 10 min.<\/li>\n<li>Add chick peas and roast another 5 min.<\/li>\n<li>Add spinach and cover pan with foil\/lid and bake another 5 minutes.<\/li>\n<li>Remove foil\/lid and drizzle with balsamic vinegar, stirring to combine.<\/li>\n<li>Serve over brown rice which has been cooked with the reserved juice from the can of tomatoes and enough water to satisfy the rice recipe.<\/li>\n<\/ol>\n<p><\/div>\n\n<p><strong>Serving Suggestions:<\/strong><br \/>\nCan be served over pasta or noodles.<\/p>\n<p><strong>Comments:<\/strong><br \/>\nI used lexia raisins but I expect any raisins would work.<\/p>\n<p>You could use more chicken but this is a great way to reduce the meat and introduce chick peas<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I found this recipe in an old &#8220;chicken&#8221; cookbook.\u00a0 Since we have cut down on the amount of meat we eat I decided to incorporate chick peas into the recipe.\u00a0 The chick peas go nicely [&hellip;]<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[80,67,87,76,290],"tags":[125,22,166],"_links":{"self":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts\/815"}],"collection":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/comments?post=815"}],"version-history":[{"count":0,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/posts\/815\/revisions"}],"wp:attachment":[{"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/media?parent=815"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/categories?post=815"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/ravenview.com\/recipes\/wp-json\/wp\/v2\/tags?post=815"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
