{"id":821,"date":"2015-03-13T12:28:06","date_gmt":"2015-03-13T12:28:06","guid":{"rendered":"http:\/\/ravenview.com\/recipes\/?p=821"},"modified":"2015-03-25T22:37:21","modified_gmt":"2015-03-25T22:37:21","slug":"turkish-carrot-pilaf","status":"publish","type":"post","link":"https:\/\/ravenview.com\/recipes\/turkish-carrot-pilaf\/","title":{"rendered":"Turkish Carrot Pilaf"},"content":{"rendered":"<p>Sometimes rice can get a little boring but this rice dish is anything but boring.\u00a0 It has colour and texture and tastes great.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">2 tbls butter<\/li>\n<li class=\"ingredient\">2 tbls olive oil<\/li>\n<li class=\"ingredient\">2 carrots, grated<\/li>\n<li class=\"ingredient\">1\/2 teas pepper<\/li>\n<li class=\"ingredient\">Pinch of salt<\/li>\n<li class=\"ingredient\">4-6 soaked, dried apricots, chopped<\/li>\n<li class=\"ingredient\">3 pieces of candied ginger, chopped<\/li>\n<li class=\"ingredient\">1 teas sugar<\/li>\n<li class=\"ingredient\">2 cups basmatti rice<\/li>\n<li class=\"ingredient\">3 cups chicken stock<\/li>\n<li class=\"ingredient\">1-2 tbls green pistachios, chopped<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Melt butter, add olive oil. Add grated carrot, salt and pepper. Cook about 3 minutes, stirring frequently. Add apricots, ginger and sugar. Stir in the rice and cook 3 minutes until the rice is coated and is translucent.<\/li>\n<li>Pour in stock and bring to a boil, reduce heat and simmer for 20-25 minutes.
