This is a moist cake that still has that wonderful tart bite of rhubarb.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Cake<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">1\/4 cup butter<\/li>\n<li class=\"ingredient\">1\/2 cup sugar<\/li>\n<li class=\"ingredient\">2 eggs<\/li>\n<li class=\"ingredient\">1 cup unbleached white flour<\/li>\n<li class=\"ingredient\">1\/2 cup spelt flour<\/li>\n<li class=\"ingredient\">1 teas baking powder<\/li>\n<li class=\"ingredient\">1\/2 teas salt<\/li>\n<li class=\"ingredient\">1 teas cinnamon<\/li>\n<li class=\"ingredient\">1\/4 cup yogurt<\/li>\n<li class=\"ingredient\">1 large apple peeled and grated<\/li>\n<li class=\"ingredient\">2 large stalks rhubarb, chopped(2 to 2 1\/2 cups)<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-ingredients\"><h3>Crumble<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">3 tbls brown sugar<\/li>\n<li class=\"ingredient\">1\/2 cup chopped pecans<\/li>\n<li class=\"ingredient\">1\/2 teas cinnamon<\/li>\n<li class=\"ingredient\">1\/2 teas nutmeg<\/li>\n<li class=\"ingredient\">1\/4 stalk rhubarb, diced (1\/3 to 1\/2 cup)<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Preheat oven to 350F and grease 8 X 8 baking pan.<\/li>\n<li>Prepare the crumble in a small bowl.<\/li>\n<li>Cream the butter and the sugar in the bowl of a stand mixer.\u00a0 Add the eggs one at a time beating to combine.<\/li>\n<li>In a separate bowl combine the flours, baking powder, salt and cinnamon and add alternately with the yogurt to the mixing bowl of the stand mixer.\u00a0 This mixture will be a thick batter.<\/li>\n<li>Add the grated apple and the rhubarb to the mixer and mix until just incorporated.\u00a0 Turn into the baking pan.<\/li>\n<li>Spread the crumble mixture over the top of the batter and bake 40-50 minutes.<\/li>\n<\/ol>\n<p><\/div>\n\n<p>Remove your eggs and butter from the fridge and let come to room temperature if time allows.<\/p>\n<p>This coffee cake can be made entirely with apples in the fall when they are in season.\u00a0 Use 3 large apples, peeled and grated.<\/p>\n<p>If you do not have spelt flour you can substitute whole wheat flour, barley flour or any other flour you have on hand.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>When rhubarb season comes we get creative with the crimson stalks.\u00a0 This recipe is an adaptation of an apple coffee cake.
