{"id":959,"date":"2015-07-13T20:55:00","date_gmt":"2015-07-13T20:55:00","guid":{"rendered":"http:\/\/ravenview.com\/recipes\/?p=959"},"modified":"2015-07-13T20:55:00","modified_gmt":"2015-07-13T20:55:00","slug":"pesto","status":"publish","type":"post","link":"https:\/\/ravenview.com\/recipes\/pesto\/","title":{"rendered":"Pesto"},"content":{"rendered":"<p>We love pesto and since we always have an abundant supply of basil in the garden we make lots of pesto for the freezer to enjoy all winter long.<\/p>\n<div class=\"shortcode-ingredients\"><h3>Ingredients<\/h3><\/p>\n<ul>\n<li class=\"ingredient\">1 clove garlic<\/li>\n<li class=\"ingredient\">1\/4 cup pine nuts or almonds, toasted<\/li>\n<li class=\"ingredient\">1 1\/2 cups fresh basil leaves<\/li>\n<li class=\"ingredient\">1\/2 cup baby spinach<\/li>\n<li class=\"ingredient\">1\/2 teas freshly ground black pepper<\/li>\n<li class=\"ingredient\">1 tbls fresh lemon juice<\/li>\n<li class=\"ingredient\">2 tbls olive oil<\/li>\n<li class=\"ingredient\">1 teas salt<\/li>\n<li class=\"ingredient\">3 tbls mayonnaise or a little extra olive oil<\/li>\n<li class=\"ingredient\">1\/2 cup Romano or Parmesan cheese, grated<\/li>\n<\/ul>\n<p><\/div>\n\n<div class=\"shortcode-directions instructions\"><h3>Directions<\/h3><\/p>\n<ol>\n<li>Place all ingredients except the mayo and the cheese in the blender or food processor and process until smooth.<\/li>\n<li>Blend in the mayo\/oil and cheese until just combined.<\/li>\n<li>This mixture can be frozen in serving sizes in small containers or frozen in ice cube trays and then dumped into a plastic bag.<\/li>\n<\/ol>\n<p><\/div>\n\n<p>Why the spinach?\u00a0 I find pesto can sometimes appear grayish after processing so I add the baby spinach to boost that nice green colour.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We love pesto and since we always have an abundant supply of basil in the garden we make lots of pesto for the freezer to enjoy all winter long.
