About 10 years ago we came upon a yard sale in Colby Village and we picked up a waffle iron.\u00a0 It had never been used and came with a bag of batter mix and only cost $8.00.\u00a0 I figured it would end up being used once and then be placed on a shelf in the appliance graveyard.\u00a0 I couldn’t have been more wrong.\u00a0 We use it on a regular basis and waffles have become one of our favourite breakfast choices.\u00a0 We serve our waffles with\u00a0\u00a0Blueberry Sauce<\/a>.<\/p>\n

Ingredients<\/h3><\/p>\n
    \n
  • 2 eggs, separated<\/li>\n
  • 1\/8 teas cream of tartar<\/li>\n
  • 2 cups unbleached flour(or spelt, barley, gluten free mixes)<\/li>\n
  • 3 teas baking powder<\/li>\n
  • 1 teas salt<\/li>\n
  • 2 tbls sugar<\/li>\n
  • 1 3\/4 milk of choice<\/li>\n
  • 2 tbls olive oil<\/li>\n
  • 1 teas vanilla<\/li>\n<\/ul>\n

    Directions<\/h3><\/p>\n

    1. Preheat waffle iron.<\/li>\n
    2. Place egg whites in the bowl of a stand mixer adding the cream of tartar and beat with the whisk attachment until peaks form.\u00a0 Remove to a bowl.<\/li>\n
    3. Place the eggs yolks in the bowl of the stand mixer and whisk until creamy.<\/li>\n
    4. Combine the wet ingredients and add to the mixer.\u00a0 Mix to combine.<\/li>\n
    5. Combine the dry ingredients and add to the mixer.\u00a0 Mix to combine.<\/li>\n
    6. Fold in egg whites.\u00a0 This can be accomplished using a large hand held whisk or a spatula.<\/li>\n
    7. Ladle into a waffle iron and cook until done.\u00a0 I use a Belgian waffle maker which takes 1 full large ladle of batter and bakes to perfection in 2 minutes.<\/li>\n<\/ol>\n

      A note about Flour:\u00a0 I have made these with low gluten and gluten free flours and have had good results.\u00a0 I would recommend when using these alternative flours that you add 1\/8 to 1\/4 teas xanthan gum.\u00a0 It will provide a better texture for your waffles.<\/p>\n
