Pineapple Salad

This is so easy and so tasty and a nice change from all that lettuce salad.  It is great to bring to a potluck.

Salad

  • 1 ripe pineapple, peeled and cut into mouth size chunks
  • 1/4 cup vietnamese coriander or cilantro, chopped
  • 1/4 cup unsalted nuts, toasted and chopped
  • zest of 1/2 lime
  • 1/2 fresh jalapeno, seeded and diced

Dressing

  • juice of 1/2 lime
  • 1 teas brown sugar
  • 2 teas tamari or Bragg’s or soya sauce

Directions

  1. Combine salad ingredients in serving bowl.
  2. Combine dressing ingredients in small bowl and stir to dissolve the sugar.  Pour over salad and stir to combine.  Let rest in the fridge for up to one day.

I had also added some diced red pepper just for looks.

I grow the vietnamese coriander in my garden every summer and bring the plant in the house for the winter.   I love the taste, it is a milder coriander with a lime undertone.  If you are lucky enough to find it at a garden centre it is an easy herb to grow in a pot and pays off big in taste.
