Cucumber Salad
This is such a simple dish but is fresh tasting and can help use up all those garden cucumbers come August.
Ingredients
- 1 english cucumber
- 2 tbls fresh dill, chopped
- 1/4 cup apple cider vinegar
- 1 to 2 teas honey
- 1/2 teas mustard seeds or dry mustard
- 1 clove garlic, crushed
- 1/4 teas salt
- 1 tbls olive oil
Directions
- Slice cucumber thinly and place in bowl with chopped dill weed.
- Combine all other ingredients and pour over cucumber mixture. Let steep for an hour or so.
