Greek Lemon Potatoes
Ingredients
- 6 large russet potatoes
- 1/4 cup lemon juice
- 2 teas lemon zest
- 1 1/2 tbls oregano
- 1 tbls olive oil
- 3 cloves garlic, minced
- 2 teas salt
- fresh ground pepper
Directions
- Wash and scrub potatoes and cut into uniform size (1/2″ slices or 1″ chunks).
- In a large roasting pan (10 X 14) toss potatoes with lemon juice, olive oil, oregano, lemon zest, garlic and salt.
- Pour 1 cup boiling water over potatoes and bake in a 450F oven until tender, about 30 minutes
Serving Suggestions:
Crumbled feta cheese may be added and put back in the oven for an additional 10 minutes. (about 1/4 cup)
