Orange Salad
Since we grow a lot of salad greens I am always on the lookout for something different in the salad department. The colours in this salad are very appealing and the dressing is sweet and tangy. Who’da thought oranges in a salad?
Salad
- Greens(lettuce, spinach)
- Red cabbage, shredded
- Broccoli, flowerettes only
- Cucumber, seeds removed
- Orange, sectioned and cubed
- Roasted almonds
Dressing
- 1/2 cup frozen orange juice concentrate
- 1/4 cup olive oil
- 1/4 cup rice vinegar
- 2 tbls honey
- 1 teas Dijon mustard
- 1 teas thyme
- zest of orange
Directions
- Prepare dressing by combining everything except the oil in a blender. This will allow the thyme and lemon zest to infuse the vinegar with flavour.
- Add the oil slowly with the motor running.
- Place all the salad ingredients in a “pretty” bowl and drizzle with the dressing.
Serving Suggestions:
The salad ingredients can be varied as I have added grapes, tomatoes, peppers or anything else that you have in the fridge or garden. Also to make this into the main meal add cooked pasta or quinoa(pronounced keen-wa)
Comments:
Look for the new plastic containers that frozen orange juice comes in. It is easy to remove just what you need and store the rest in the freezer.
