Pineapple Salad
This is so easy and so tasty and a nice change from all that lettuce salad. It is great to bring to a potluck.
Salad
- 1 ripe pineapple, peeled and cut into mouth size chunks
- 1/4 cup vietnamese coriander or cilantro, chopped
- 1/4 cup unsalted nuts, toasted and chopped
- zest of 1/2 lime
- 1/2 fresh jalapeno, seeded and diced
Dressing
- juice of 1/2 lime
- 1 teas brown sugar
- 2 teas tamari or Bragg’s or soya sauce
Directions
- Combine salad ingredients in serving bowl.
- Combine dressing ingredients in small bowl and stir to dissolve the sugar. Pour over salad and stir to combine. Let rest in the fridge for up to one day.
I had also added some diced red pepper just for looks.
I grow the vietnamese coriander in my garden every summer and bring the plant in the house for the winter. I love the taste, it is a milder coriander with a lime undertone. If you are lucky enough to find it at a garden centre it is an easy herb to grow in a pot and pays off big in taste.
