Stuffed Dates

We were asked to a birthday party and when we asked “What can we bring?”, We were told “healthy snacks”.  We both immediately thought of Stuffed Dates. These are so easy to make and are always a hit at a party.

Ingredients

  • 20 medjool dates
  • 1 small package of low fat soft goat cheese
  • 20 pecans
  • 2 tbls rice flour
  • 1 egg white

Directions

  1. Slit dates lengthwise and remove pit.  Do not cut through.
  2. Fill the date with the goat cheese, add a pecan and squeeze shut.
  3. Roll dates in the rice flour then dip into egg white and place on a cookie sheet covered with parchment paper seam side up.
  4. Bake at 350 F for about 20-25 minutes.
  5. Cool slightly and serve.

If you are making these ahead just cover with foil and reheat at 225 F for about 10-15 minutes.
