Good Morning Muesli

Are you stuck in an oatmeal rut?  Don’t have time to make breakfast in the morning?  Muesli is one of those make ahead dishes that will help keep you on schedule and also help keep you full until lunch time.  You can eat this cold or hot and you can customize the recipe to include your favourite nuts, seeds and dried fruit.  This recipe makes 4 servings and will keep in the fridge up to 4 days.

Ingredients

  • 1 cup large flake rolled oats
  • 1 large apple, grated
  • 2 cups milk of choice
  • 1 1/2 teas vanilla
  • 1 tbls ground flaxseed
  • 2 tbls chia seeds
  • 1/4 cup dried apricots
  • 1/4 cup almonds
  • 2 tbls pumpkin seeds
  • 2 tbls sunflower seeds
  • 1/4 cup unsweetened coconut
  • 1/2 teas cinnamon
  • pinch ground nutmeg

Directions

  1. Combine all ingredients in a medium size bowl.  Cover and put in the fridge overnight.
  2. Divide among serving bowls.  Reheat or eat cold topped with seasonal fruit and additional milk or yougurt if desired.
