Pasta Sauce


  • 2 tbls olive oil
  • 2 medium onions, diced
  • 1 stalk of celery, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 2 cloves of garlic, diced
  • 1 cup diced mushrooms
  • 2 teas dried oregano
  • 2 teas dried basil
  • 1/2 teas chili flakes
  • salt & pepper
  • 1 28oz can of diced tomatoes or fresh tomatoes
  • 1 28oz can crushed tomatoes
  • 1-2 tbls sugar
  • 1 teas lemon juice


  1. Saute onion, celery, peppers and mushrooms in olive oil until onions are translucent.
  2. Add garlic and saute another 30 seconds.
  3. Add spices and saute another 30 seconds.
  4. Add diced fresh or diced canned tomatoes ONLY.
  5. Reduce heat and let simmer until the sauce has reduced, about 20 minutes.
  6. Add remaining can of crushed tomatoes, the sugar and lemon juice.
  7. Refresh the spices to taste.
  8. Simmer 5 minutes.

Serving Suggestions:
You can use this over any pasta dish. You can puree in a food processor for a smooth sauce.

This is just a starting place for a basic tomatoe sauce. Add meatballs for spaghetti and meatballs, use in lasagna or other baked pasta dishes like baked rigatoni.
