Fresh Pasta


  • 4 eggs
  • salt
  • 2 cups flour
  • Pasta machine (Optional)


  1. Put flour on a clean counter.
  2. Create a depression in the center of the flour, sprinkle with salt.
  3. Add eggs to depression and mix into flour.
  4. Mix until it forms a dough.
  5. Knead for about 10 minutes.
  6. Pull off a small piece of dough the size of a small orange.
  7. Feed dough through the roller on the pasta machine starting with the widest setting and working your way to
  8. thinest setting.
  9. Cut into desired noodle shapes.
  10. Let dry 15 min

Serving Suggestions:
Fill a large pot with water. Add 1 1/2 tbls salt. Bring to a rolling boil. Drop in fresh pasta and cook until el dente, stirring frequently. Drain and top with olive oil or add to prepared sauce.
