Sweet Mustard

We have been making this sweet mustard for over 25 years and people still ask us for the recipe.  It it so good with baked ham dinner but is very versatile as it can be served as a dip for pepperoni or as a spread on any kind of sandwich.  It is best made in the microwave as it will spit as it bubbles on a stove top.

Ingredients

  • 1/2 cup brown sugar, firmly packed
  • 1/3 cup prepared mustard
  • 2 eggs
  • 2 tbls butter or margarine, room temperature
  • 1/3 cup white vinegar

Directions

  1. In a microwave safe dish with a lid whisk together the sugar, mustard, eggs and butter.  Gradually whisk in the vinegar.
  2. Microwave on high for 3 minutes.  Remove and whisk (CAUTION: Remove lid with oven gloves to avoid a steam burn).  Return to microwave on high for 2 minutes.  Remove and whisk to a smooth sauce.
  3. If you are using a stove top combine the ingredients as in Step 1.  Cook over medium heat, stirring constantly until thickened, about 10 minutes.
