Lebanese Kofta
Ingredients
- 1 lb ground lamb
- 1/2 cup finely chopped onion
- 1 cup bread crumbs
- 1 egg
- 1 clove minced garlic
Spice mixture
- 1/4 cup dried parsley
- 2 tbls allspice
- 1 tbls garlic powder
- 1/2 tsp ground paprika
- 1/2 tsp ground black pepper
- 1 tsp salt
(Note: you will only use 1 tbls of spice mixture per pound of lamb)
Directions
- Soak bamboo skewers for 30 minutes before prepping (or use stainless steel skewers).
- Preheat an outdoor grill to high heat.
- Mix the lamb with the onion, minced garlic, bread crumbs and egg. Add 1 tbls of the spice mixture and mix thoroughly in a large glass bowl.
- Wet fingers and hands (or coat fingers and hands with a bit of olive oil) and mold meat mixture around skewers in a long, oblong log shape.
- Grill until meat is no longer pink. Do not over grill, but ensure that the meat is cooked thoroughly.
- Serve hot.
Serving Suggestions:
Can also be enjoyed as burgers!
Optional:
You can substitute fresh parsley for the dried but add it to the meat mixture and not the spice mixture.
