Lebanese Kofta


  • 1 lb ground lamb
  • 1/2 cup finely chopped onion
  • 1 cup bread crumbs
  • 1 egg
  • 1 clove minced garlic

Spice mixture

  • 1/4 cup dried parsley
  • 2 tbls allspice
  • 1 tbls garlic powder
  • 1/2 tsp ground paprika
  • 1/2 tsp ground black pepper
  • 1 tsp salt

(Note: you will only use 1 tbls of spice mixture per pound of lamb)


  1. Soak bamboo skewers for 30 minutes before prepping (or use stainless steel skewers).
  2. Preheat an outdoor grill to high heat.
  3. Mix the lamb with the onion, minced garlic, bread crumbs and egg. Add 1 tbls of the spice mixture and mix thoroughly in a large glass bowl.
  4. Wet fingers and hands (or coat fingers and hands with a bit of olive oil) and mold meat mixture around skewers in a long, oblong log shape.
  5. Grill until meat is no longer pink. Do not over grill, but ensure that the meat is cooked thoroughly.
  6. Serve hot.

Serving Suggestions:
Can also be enjoyed as burgers!

You can substitute fresh parsley for the dried but add it to the meat mixture and not the spice mixture.
