Aloo Gobhi Matar
Ingredients
- 1 medium cauliflower, cut in florets
- 3 medium potatoes, cut in cubes
- 1 teas cumin seeds
- 1 teas corriander seeds
- 1 tbls black mustard seeds
- 1/2 teas ground tumeric
- 1/2 teas garam masala
- 1/2 teas sea salt
- 1 fresh green chili(seranno), seeded & chopped
- 2 cloves garlic, chopped
- 1 tbls ginger, peeled and chopped
- 2 tbls ghee or canola oil
- 1 cup frozen peas
- 2 medium tomatoes, deseeded and chopped
- Handful cilantro leaves, chopped
Directions
- Cook potatoes and cauliflower until almost done (al dente), set aside and let cool.
- Heat wok and toast cumin, corriander and black mustard seeds.
- Place seeds in mortar or coffee grinder (not used for coffee) with the tumeric, garam masala and sea salt and grind until fine.
- Combine green chili, garlic and ginger in mortar or small food processor and mash to a paste.
- Heat canola oil in wok. Add green chili paste and cook for 1 minute.
- Add potatoes, cauliflower, peas and tomatoe to wok.
- Sprinkle with dry spice mixture and combine.
- Keep mixture moist with some water until potatoes are done, about 5 minutes.
- Sprinkle with cilantro.
Serving Suggestions:
Serve as a vegetarian main course with rice or with Chicken Masala as a vegetable accompaniment.
