Cookies For Breakfast
Good with your morning coffee or a great after school snack for the kids……don’t tell them that they are good for them!
Ingredients
- 1 cup flour(spelt, barley or whole wheat)
- 1/2 cup oat bran
- 1 cup large flake oats
- 1 teas baking powder
- 1/2 teas salt
- 1 tbls cinnamon
- 1 teas ginger
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 1/2 cup chopped almonds
- 1/4 cup ground flax seeds
- 1/2 cup sunflower seeds
- 2 tbls poppy seeds
- 1/4 cup sesame seeds
- 1/4 cup coconut
- 1 cup soft butter
- 1/2 cup almond butter
- 3/4 cup brown sugar
- 2 large eggs
- 1/4 cup yogurt
Directions
- Combine flour, oat bran, oats, baking powder, salt, cinnamon, ginger, raisins, cranberries, almonds, flax meal, sunflower seeds, sesame seeds, coconut and poppy seeds in a bowl.
- In a separate mixing bowl cream butter, almond butter and brown sugar. Add eggs one at a time, beating after each addition. Stir in yogurt.
- Add fruit and nut mixture to butter mixture and stir together.
- Drop by large tablespoons on a greased baking sheet.
- Bake 350F for 15 minutes.
