Cookies For Breakfast

Good with your morning coffee or a great after school snack for the kids……don’t tell them that they are good for them!

Ingredients

  • 1 cup flour(spelt, barley or whole wheat)
  • 1/2 cup oat bran
  • 1 cup large flake oats
  • 1 teas baking powder
  • 1/2 teas salt
  • 1 tbls cinnamon
  • 1 teas ginger
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup chopped almonds
  • 1/4 cup ground flax seeds
  • 1/2 cup sunflower seeds
  • 2 tbls poppy seeds
  • 1/4 cup sesame seeds
  • 1/4 cup coconut
  • 1 cup soft butter
  • 1/2 cup almond butter
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/4 cup yogurt

Directions

  1. Combine flour, oat bran, oats, baking powder, salt, cinnamon, ginger, raisins, cranberries, almonds, flax meal, sunflower seeds, sesame seeds, coconut and poppy seeds in a bowl.
  2. In a separate mixing bowl cream butter, almond butter and brown sugar. Add eggs one at a time, beating after each addition. Stir in yogurt.
  3. Add fruit and nut mixture to butter mixture and stir together.
  4. Drop by large tablespoons on a greased baking sheet.
  5. Bake 350F for 15 minutes.
