Cornmeal Muffins
We have these muffins warm from the oven along side a bowl of soup. I usually buy two grinds of cornmeal, coarse and fine, and use 1/2 a cup of each in the recipe. We like the crunchiness of the coarse grind in the muffin.
Ingredients
- 1 cup cornmeal
- 1 cup unbleached white flour
- 1/2 teas salt
- 1 tbls baking powder
- 3/4 cup yogurt or milk
- 2 eggs
- 1/4 cup olive oil
- 3 tbls honey
Directions
- Combine dry ingredients in a bowl and stir to combine.
- Combine wet ingredients in a bowl and stir to combine.
- Add wet to dry and stir just to combine.
- Place in lined or greased muffin tins and bake at 375F for 12-15 minutes.
- Makes 9 muffins
Serving Suggestions:
Great with soup or as a snack with jam.
