Cornmeal Muffins

Cornmeal Muffins

We have these muffins warm from the oven along side a bowl of soup.  I usually buy two grinds of cornmeal, coarse and fine, and use 1/2 a cup of each in the recipe.  We like the crunchiness of the coarse grind in the muffin.


  • 1 cup cornmeal
  • 1 cup unbleached white flour
  • 1/2 teas salt
  • 1 tbls baking powder
  • 3/4 cup yogurt or milk
  • 2 eggs
  • 1/4 cup olive oil
  • 3 tbls honey


  1. Combine dry ingredients in a bowl and stir to combine.
  2. Combine wet ingredients in a bowl and stir to combine.
  3. Add wet to dry and stir just to combine.
  4. Place in lined or greased muffin tins and bake at 375F for 12-15 minutes.
  5. Makes 9 muffins

Serving Suggestions:
Great with soup or as a snack with jam.
