Mashed Potato Muffins

Ingredients

  • 2/3 cup unbleached white flour
  • 1/4 cup cornmeal
  • 1 tbls sugar
  • 2 teas baking powder
  • 3/4 teas salt
  • 1/4 teas pepper
  • 1/4 teas oregano
  • 2 tbls onions, minced
  • 2 tbls red pepper, small dice
  • 2 eggs
  • 1 cup mashed potatoes
  • 1/3 cup yogurt
  • 2 tbls olive oil

Directions

  1. Preheat oven to 375 F.
  2. Combine the dry ingredients in a large bowl.  Add the onions and peppers to the flour mixture.
  3. Combine the wet ingredients in another bowl and whisk until there are no large lumps of potatoes.
  4. Combine both wet and dry ingredients together and mix.
  5. Place in greased muffin tins or use muffin liners and bake for 12-15 minutes.  Makes 6-8 muffins.
