Mexican Salad

Ingredients

  • 1 can black beans(398ml) drained and rinsed
  • 1 1/2 cups corn, cooked and cooled
  • 1 cup grape tomatoes, quartered
  • 1 cup diced red pepper
  • 1 cup diced mango
  • 1/2 cup green onion, chopped
  • 2 tbls minced fresh cilantro
  • 1 avocado, diced

Dressing

  • 3 tbls lime juice
  • 2 tbls olive oil
  • 1/4 teas salt & pepper
  • 1/4 teas cumin
  • 1/2 teas chili powder
  • 1 tbls honey

Directions

  1. Make dressing and allow flavours to blend.
  2. Toss salad and add avacado just before serving as it turns brown quickly.

Serving Suggestions:
May be served with lettuce or spinach but not necessary.
