Orange Millet Cereal

Millet….bird seed, right?  Not so.  This underused and undervalued grain can be used alone or combined with other grains in hot cereals, salads, soups, pancakes, meat loaf….you get the idea.  It is the zucchini of the grain family.  We made this hot breakfast cereal as an alternative to oatmeal.  Although the cooking time is longer than oats you can use that time take a shower, read the paper, check your email, etc. while it simmers.

Ingredients

  • 1 cup millet
  • 1 1/4 cups water
  • 1 cup orange juice
  • 1/4 teas cardamom
  • 2 tbls honey or maple syrup
  • raisins or other dried fruits
  • unsalted sunflower/pumpkin seeds
  • unsalted nuts
  • coconut
  • Milk of choice

Directions

  1. Heat a medium size saucepan and add millet, stirring until it turns a golden colour and smells toasty, about 3 minutes.
  2. Add the water, orange juice and cardamom. Reduce heat and simmer about 30 minutes or until liquid has been absorbed.
  3. Stir in honey or maple syrup and any of the other condiments.
  4. Divide among 4 bowls and serve with almond milk or other milk of choice

Serving Suggestions:
The toppings are a matter of choice. I also use ground flax seed and fresh fruit like bananas, and berries in season.
