Pineapple Fried Rice
Ingredients
- 1 whole pineapple
- 2 tbls peanut oil
- 1 small onion, chopped
- 1 jalapeno, diced
- 1 cup lean pork, ground
- 10 shrimp, cooked and chopped
- 4 cups cold cooked rice
- 1/2 cup roasted cashews
- 2 green onions, sliced
- 1 clove of garlic
- 4 tbls fish sauce
- 2 tbls tamari (soy sauce)
- 1 sweet green chili, cubanelle
- 1/2 sweet red pepper, sliced
Directions
- Cut the pineappe lenghtways and remove flesh from both halves. You will need about 2 cups of the cubed pineapple for the rice dish. Reserve the pineapple shells to serve the rice in.
- Heat oil in wok. Add onion, garlic and jalapeno pepper. Add pork and cook until done. Add the rest of the ingredients, adding the rice in fourths to maintain the heat in the wok. Stir fry adding the fish sauce and soy sauce at the end and stir fry until combined.
Serving Suggestions:
Serve in hollowed out pineapple shells.
