Creamy Balsamic Dressing

This recipe came to me via a friend, Bev, who ate a salad at a local hotel and somehow managed to get the salad dressing recipe from the chef.  This salad dressing could be used on any green salad.  I prefer it drizzled on and not tossed as the dressing is dark due to the balsamic vinegar.

Ingredients

  • 1 small clove of garlic
  • 1 1/2 teas grainy dijon mustard
  • 4 basil leaves
  • 3 tbls balsamic vinegar
  • 2 tbls honey
  • 4 1/2 oz olive oil
  • salt and pepper

Directions

  1. Blend all ingredients EXCEPT the oil in a blender or food processor.
  2. Once combined add the oil with the motor running.
  3. Keep refrigerated.
