Strawberry Goat Cheese Salad

When strawberries are in season here in Nova Scotia we eat them 3 times a day.  Our local berries are smaller than the imports but when they are ripe and sweet they have a taste that can’t be beat.

Ingredients

  • 1 head lettuce or baby spinach
  • 1 pint strawberries
  • 2 tbls red onion
  • 3″ roll of soft goat cheese
  • 1/4 cup pecans or walnuts

Dressing

  • 3/4 cup white sugar
  • 1 teas dry mustard
  • 1 teas salt
  • 1/3 cup vinegar
  • 1 teas finely chopped onion
  • 1 cup olive oil
  • 1 1/2 teas poppy seeds

Directions

  1. Roast nuts in a dry fry pan or in the oven. Toss the lettuce with the onions and goat cheese. Slice the berries arrange on top. Sprinkle with the nuts.
  2. To prepare salad dressing, process the sugar, mustard, salt vinegar and onion in a blender and blend until smooth. Add salad oil slowly with motor running. Stir in poppy seeds. Drizzle salad with some of the dressing and store remainder in the fridge.

Serving Suggestions:
Poppy Seed dressing is excellent on traditional spinach salad as well.
