Fava Bean Cakes with Tomato Jam
Ingredients
- 1 can fava beans
- 1 tbls red pepper, diced
- 1 tbls green pepper, diced
- 1/4 cup green onions or leeks
- 1 tbls pesto
- 1 egg
- 1 tbls grainey dijon mustard
- 1/4 cup flour (potatoe, splelt, rice, barley)
Tomatoe Jam
- 1 can diced tomatoes strained, saving juice
- 1/4 cup sugar
Directions
- Saute red pepper, green pepper, onion/leek. Add some of the juice off the tomatoes if mixture looks dry.
- Mash or process fava beans in the food processor. Add the rest of the ingredients and shape the mixture into patties. Pan fry in a little olive oil until browned.
- To prepare the tomatoe jam, put tomatoes in a saucepan, put the sugar on top. DO NOT STIR. Simmer for 30 minutes to reduce to a thicker consistency, then stir to serve.
Serving Suggestions:
Serve the pattie on a bun with greens and cheese or just on a plate along side a green salad.
Optional:
Change the beans to chick peas or any other cooked bean.
Add wild rice.
Nice served with some reduced balsamic vinegar as well.
