Fava Bean Cakes with Tomato Jam

Ingredients

  • 1 can fava beans
  • 1 tbls red pepper, diced
  • 1 tbls green pepper, diced
  • 1/4 cup green onions or leeks
  • 1 tbls pesto
  • 1 egg
  • 1 tbls grainey dijon mustard
  • 1/4 cup flour (potatoe, splelt, rice, barley)

Tomatoe Jam

  • 1 can diced tomatoes strained, saving juice
  • 1/4 cup sugar

Directions

  1. Saute red pepper, green pepper, onion/leek. Add some of the juice off the tomatoes if mixture looks dry.
  2. Mash or process fava beans in the food processor. Add the rest of the ingredients and shape the mixture into patties. Pan fry in a little olive oil until browned.
  3. To prepare the tomatoe jam, put tomatoes in a saucepan, put the sugar on top. DO NOT STIR. Simmer for 30 minutes to reduce to a thicker consistency, then stir to serve.

Serving Suggestions:
Serve the pattie on a bun with greens and cheese or just on a plate along side a green salad.

Optional:
Change the beans to chick peas or any other cooked bean.

Add wild rice.

Nice served with some reduced balsamic vinegar as well.
