Granola with Fruit & Nuts

We love homemade granola!  We use it over plain yogurt, over ice cream, in cookies and muffins, as a topping for fruit crisps, in a salad and sometimes as a breakfast cereal with almond milk.  This recipe is very versatile and you can change up any of the nuts/seeds and fruits for others you enjoy.

Ingredients

  • 4 cups large flake rolled oats
  • 2 cups oat bran
  • 1 cup sesame seeds
  • 1 cup unsweetened coconut flakes
  • 1 cup raw sunflower seeds
  • 1/2 cup raw almonds, chopped
  • 1/2 cup raw walnuts, chopped
  • 1 cup raisins or dried cranberries
  • 1/2 cup dried mango or apricots or papaya, chopped
  • 1/2 cup candied ginger, chopped
  • 1/2 cup olive oil
  • 1/4 cup honey or maple syrup

Directions

  1. In a large oven safe pan combine the oats, bran, seeds, coconut and nuts.
  2. Heat honey/maple syrup and oil until mixture is very thin.  Drizzle over the oat combination and mix until everything is evenly coated.
  3. Bake at 325 F for 10 minutes,  stir and return to oven for another 10 minutes, stir and return to oven for another 10 minutes OR until LIGHTLY browned.  Watch carefully as you don’t want to over bake your granola.
  4. Add the chopped fruit when the granola has cooled.
  5. Store in an airtight container.
