Greek Tofu Salad
Ingredients
- 1 cup firm tofu
- 4 cups romaine lettuce
- 2 cups cubed english cucumber
- 1 cup chopped tomatoes
- 1/3 cub crumbled feta cheese
- 1/4 cup pitted black olives
Dressing
- 1/4 cup red wine vinegar
- 1/4 cup xtra-virgin olive oil
- 2 tbls lemon juice
- 2 teas honey
- 2 cloves garlic minced
- 1/2 teas oregano
- 1/2 teas mint
- 1/4 teas salt & pepper
Directions
- Cube the tofu.
- Pour about 1/3 of the dressing over the tofu and marinade.
- In a large bowl combine all the salad ingredients and toss with the dressing.
- Pan fry the tofu until golden and serve over the salad.
Optional:
For a non-vegetarian meal, substitute chicken for the tofu.
