Greek Tofu Salad

Ingredients

  • 1 cup firm tofu
  • 4 cups romaine lettuce
  • 2 cups cubed english cucumber
  • 1 cup chopped tomatoes
  • 1/3 cub crumbled feta cheese
  • 1/4 cup pitted black olives

Dressing

  • 1/4 cup red wine vinegar
  • 1/4 cup xtra-virgin olive oil
  • 2 tbls lemon juice
  • 2 teas honey
  • 2 cloves garlic minced
  • 1/2 teas oregano
  • 1/2 teas mint
  • 1/4 teas salt & pepper

Directions

  1. Cube the tofu.
  2. Pour about 1/3 of the dressing over the tofu and marinade.
  3. In a large bowl combine all the salad ingredients and toss with the dressing.
  4. Pan fry the tofu until golden and serve over the salad.

Optional:
For a non-vegetarian meal, substitute chicken for the tofu.
