Lentil Mushroom Burgers

Ingredients

  • 1/2 chopped pecans, toasted
  • 1 19oz can lentil or 2 cups cooked green or brown lentils
  • 1 tbls olive oil
  • 3 cups mushrooms, finely chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbls chili powder
  • 1/2 teas salt & pepper
  • 1/2 teas cumin
  • 1/2 teas oregano
  • 1/4 cup dry bread crumbs
  • 1/4 cup salsa

Directions

  1. Combine toasted pecans and lentils in a food processor and pulse until smooth.
  2. Heat oil in skillet and fry mushrooms, onions, garlic, salt&pepper and spices until liquid has evaporated. Add to food processor along with the bread crumbs and salsa. Pulse to combine. Shape into patties. Heat griddle or fry pan and cook until brown and crisp, turning once.

Serving Suggestions:
Nice served with a salad or as a burger in a bun with your favourite toppings.

Optional:
The patties may be made ahead and stored in the fridge for up to 4 days.
