Ultimate Quiche

We have made this for a weekend brunch and had it with a salad and a fruit tray.  We buy the smoked Swiss cheese from Sweet Williams at the Seaport Farmers’ Market in Halifax.  If smoked Swiss is not available where you live choose another mild smoked cheese.


  • Pastry for one 9″ pie shell
  • 3/4 cup smoked Swiss Cheese
  • 1/2 cup Parmesan cheese
  • 1/4 cup green onions chopped
  • 6 eggs
  • 1 cup cream
  • 3 teas Worcestershire sauce
  • 3/4 teas dry mustard
  • 3/4 teas salt
  • 1/8 teas pepper
  • 1/8 teas nutmeg


  1. Put cheeses and onions into the bottom of the pie shell.
  2. Beat together the remaining ingredients and pour into pie shell over the cheese and onions.
  3. Bake in a 375 F degree oven for 20 minutes or until golden brown. Serve warm.

Serving Suggestions:
You can add ham, broccoli, spinach or whatever else you have in the fridge to this quiche to make it truly unique.


As an option you can purchase pastry tart shells and make individual quiches.

Can be refrigerated and reheated.
