Ingredients
- 2/3 cup unbleached white flour
- 1/4 cup cornmeal
- 1 tbls sugar
- 2 teas baking powder
- 3/4 teas salt
- 1/4 teas pepper
- 1/4 teas oregano
- 2 tbls onions, minced
- 2 tbls red pepper, small dice
- 2 eggs
- 1 cup mashed potatoes
- 1/3 cup yogurt
- 2 tbls olive oil
Directions
- Preheat oven to 375 F.
- Combine the dry ingredients in a large bowl. Add the onions and peppers to the flour mixture.
- Combine the wet ingredients in another bowl and whisk until there are no large lumps of potatoes.
- Combine both wet and dry ingredients together and mix.
- Place in greased muffin tins or use muffin liners and bake for 12-15 minutes. Makes 6-8 muffins.
