Mayonnaise

Ingredients

  • 2 egg yolks
  • 3/4 teaspoon salt
  • 1/2 teaspoon pwd mustard
  • 1/8 teaspoon sugar
  • Pinch cayenne pepper
  • 4 or 5 teaspoons lemon juice
  • 1 1/2 cups olive oil
  • 4 teaspoons hot water

Directions

  1. Beat yolks, salt, mustard, sugar, pepper and 1 teaspoon lemon juice in small bowl until thick and pale yellow.
  2. While beating vigorously, add 1/4 cup oil drop by drop.
  3. Beat in 1 teaspoon each of lemon juice and hot water.
  4. Add another 1/4 cup oil a few drops at a time while continuing to beat vigorously.
  5. Beat in another teaspoon each of lemon juice and water.
  6. Add 1/2 cup oil in a very fine steady stream, beating constantly.
  7. Mix in remaining lemon juice and water. Slowly beat in remaining oil.
  8. Cover and refrigerate until needed.

Optional:
To thin mayo, add a little hot water.

Stores up to one week.
