Pasta Sauce
Ingredients
- 2 tbls olive oil
- 2 medium onions, diced
- 1 stalk of celery, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 2 cloves of garlic, diced
- 1 cup diced mushrooms
- 2 teas dried oregano
- 2 teas dried basil
- 1/2 teas chili flakes
- salt & pepper
- 1 28oz can of diced tomatoes or fresh tomatoes
- 1 28oz can crushed tomatoes
- 1-2 tbls sugar
- 1 teas lemon juice
Directions
- Saute onion, celery, peppers and mushrooms in olive oil until onions are translucent.
- Add garlic and saute another 30 seconds.
- Add spices and saute another 30 seconds.
- Add diced fresh or diced canned tomatoes ONLY.
- Reduce heat and let simmer until the sauce has reduced, about 20 minutes.
- Add remaining can of crushed tomatoes, the sugar and lemon juice.
- Refresh the spices to taste.
- Simmer 5 minutes.
Serving Suggestions:
You can use this over any pasta dish. You can puree in a food processor for a smooth sauce.
Optional:
This is just a starting place for a basic tomatoe sauce. Add meatballs for spaghetti and meatballs, use in lasagna or other baked pasta dishes like baked rigatoni.
