Ted’s Favourite Salad
Most times I start with a bowl and add whatever salad ingredients that I happen to have in the fridge and garden. This became the one that Ted asked for time and again, thus the name.
Salad
- Salad greens
- 1 ripe avocado
- 1 large tomato
- 1 large carrot, juliened
- 1/4 cup feta cheese
- 1/2 cup of seedless grapes, cut in half
Dressing
- 1/3 cup rice vinegar
- 1 1/2 teas salt
- 2 tbls honey
- 6 mint leaves or 1 teas dried
- 1/4 teas dry mustard
- 1 tbls fresh oregano or 2 teas dried
- 1 tbls fresh thyme or 2 teas dried
- 2/3 cup olive oil
Directions
- Place all the salad ingredients in a pretty bowl.
- Put the rice vinegar, salt, honey, mint, dry mustard, oregano and thyme in a blender. Turn on low to combine. While motor is running gradually add the olive oil. For best flavour let the dressing steep a while. Use as much as you like on the salad or serve on the side. Keep the rest in the fridge for future salads.
A pretty bowl is not necessary but I believe it makes it taste better. After all we eat with our eyes as well as our mouths.
