Mexican Salad
Ingredients
- 1 can black beans(398ml) drained and rinsed
- 1 1/2 cups corn, cooked and cooled
- 1 cup grape tomatoes, quartered
- 1 cup diced red pepper
- 1 cup diced mango
- 1/2 cup green onion, chopped
- 2 tbls minced fresh cilantro
- 1 avocado, diced
Dressing
- 3 tbls lime juice
- 2 tbls olive oil
- 1/4 teas salt & pepper
- 1/4 teas cumin
- 1/2 teas chili powder
- 1 tbls honey
Directions
- Make dressing and allow flavours to blend.
- Toss salad and add avacado just before serving as it turns brown quickly.
Serving Suggestions:
May be served with lettuce or spinach but not necessary.
