Asian Broccoli Ginger Salad

This salad is a refreshing change from the traditional broccoli salad with mayo.  I find it is closer to a slaw than a salad.

Dressing

  • 1 small clove of garlic, minced
  • 2 teas fresh ginger, grated
  • 1 teas grainy dijon mustard
  • 2 tbls honey
  • 2 tbls braggs or tamari
  • 1 teas fish sauce
  • 1/2 cup olive oil
  • 1/2 teas pepper

Salad

  • 2 cups broccoli florets
  • 1/2 cup carrots,  julienned
  • 1/2 cup red cabbage, shredded
  • 1 green onion, chopped into 1/2″ sections
  • 1/4 cup peanuts
  • 2 teas black or white sesame seeds for garnish

Directions

  1. Combine all dressing ingredients in a jar with a tight fitting lid and shake well
  2. In a large bowl combine the broccoli, carrots, cabbage and onions.  Add dressing and toss well.
  3. Heat a small fry pan and toast the peanuts and sesame seeds separately.  Cool on plate and then sprinkle over the top of the salad.

Comments

If you find yourself in a bit of a rush try the bagged broccoli slaw in the produce section of your local supermarket.  I also find there is enough dressing for two salads or double the Salad ingredients.
