Sausage Frittata

Ingredients

  • 2 hot Italian sausages, sliced thinly
  • 1 tbls oive oil
  • 1 small onion
  • 1 cup grape tomatoes
  • 1 potatoe, peeled & diced
  • 6 eggs
  • 1/4 teas salt & pepper
  • 1/8 teas nutmeg
  • 1/4 cup baby spinach, chopped
  • 1 green onion
  • 1/2 cup cheese, mozzarella

Directions

  1. Brown sausages in an oven proof skillet.
  2. Remove to drain on paper towel. Drain fat from pan.
  3. Return pan to stove and add potatoes cooking for about 5 minutes.
  4. Add onions and tomatoes and cook until onions are translucent and potatoes are cooked.
  5. In a bowl, whisk eggs with salt& pepper and nutmeg. Stir in spinach and green onion.
  6. Return sausage to pan and pour eggs mixture into skillet. Sprinkle with cheese.
  7. Bake in a 350F oven for about 10 minutes or until eggs are done.

Serving Suggestions:
Serve with a side salad
