Beef And Oyster Mushrooms In Oyster Sauce

Ingredients

  • 2 lb beef steak
  • 1/4 cup vegetable oil
  • 2 onions, thinly sliced
  • 1 jalapeno, seeded and diced
  • 4 cups oyster mushrooms, sliced
  • 2 tbls oyster sauce
  • 1/4 cup beef stock

Marinade

  • 2 tbls tapioca starch
  • 2 tbls tamari
  • 2 egg yolks
  • 2 cloves garlic, minced
  • 1 1/4 tbls sesame oil
  • 2 teas grated ginger
  • 2 pinches pepper
  • 2 pinches cloves
  • 2 pinches cinnamon
  • 2 pinches cayenne pepper

Directions

  1. Slice beef across grain into thin strips. Place in a bowl to marinade for 15-30 minutes.
  2. Heat 2 tbls oil to wok and fry the beef in batches, adding oil to each new batch, removing to plate to avoid stewing.
  3. When all the the beef has been fried, add the onions and pepper to the wok. Stir fry until onion has softened then add the mushrooms and stir fry 1 minute.
  4. Return beef and any accumulated juices back to the wok.
    Add the oyster sauce and stir fry until heated through
